My Afternoon Salad May 17th
Today I ate a primarily raw, properly food-combined salad for lunch with
Local, organic Community-supported Swiss Chard and Spinach
Organic Millet and Lentils
Raw Organic Walnuts
Local, organic Community-supported chipotle goat chevre
Cayenne, rosemary, thyme, spirulina, salt
Raw Organic Coconut Oil and Coconut Aminos
And it was bomb-diggity. Nice and spicy, and had a lot of other flavors as well. The coconut aminos are delicious they're from a company called Coconut Secret. The local CSA (Community Supported Agriculture) veggies are so vibrant and delicious. I feel energized and properly strengthened rather than depressed and tired like I would off of "regular" food or even improperly combined foods.

Rawpple Pie - Raw Apple Pie
I love making desserts with raw foods because they're generally no more than 10 ingredients. I mean you can get fancy and get over 10 but to make something delicious, gourmet and pleasing to all the senses it only takes 5 or 6.
So my roommate graduated college today and I "cooked" her a rawpple pie for her graduation cookout. It took me about an hour of time total. I prepared the crust the day before and the filling the night before and put it together that night.
Crust: So simple
3C Dates and
1C walnuts
Process the dates first until they're JUST about to form balls in the processor. Then add the nuts. Spread coconut flakes, almond flour, I used flax seeds on the pie pan so that you can separate the crust from the pan.
The filling:
2 apples
1/4C walnuts
2tsp cinnamon
2tsp maca root
1Tbls Honey (or Agave, if you'd rather)
Process well until the consistency is desired - I did it on low for about 5 minutes, if that. Scoop the sides - but if you do it on low it should fall back in before you have to.
Slice 1 1/4 more apples and arrange like so:
Voila! Bon Apetit!

Raw McGuiver #1: Banana Walnut Carrot Cake with no dates
Roommate Victoria: "Xam, can you make some Xammin' goody if I provide you with the walnuts?"
Xam: "You got dates?"
Victoria: "no, I thought you did..."
Xam: "nope...but I can figure somethin' out."
Minutes later, a banana-walnut carrotcake is put into the freezer.
How did I accomplish this without dates you ask?
Well, it went a lil something like this:
1c Walnuts
1C sunflower seeds
grind them both and add them to a food processor.
Add half a banana, half a carrot cut pretty small, half a lemon's juice, 1/2 Tbsp. of cinnamon and about 2 Tbsp. of honey. Process that until it makes a sort of cake batter.
Add a handful o walnuts and process or hand mix them (and chop them).
Stick this in the freezer.
For the frosting?
The other half of that carrot? Shred it.
The other half of that lemon? Juice it and add it into a bowl with the carrot
1/2 Tbsp. of cinnamon, 1 tsp of nutmeg
1/2 Tbsp of carob powder
1/2 Tbsp of melted coconut oil
Take a half C of sunflower seeds and finely grind them and add them to the bowl.
Mix it all up, take the cake out of the freezer and add the frosting on top. Freeze for another 30 minutes and serve!

Xammin' Cranberry-Choco-Lemon Juice Bars 1/8/10
Hello everybodies! As per request, here is the recipe for the Xammin' Bars that I made tonight...
1 C Cashew
1C Dates pitted
half a lemon (in this case I used a Meyer's Lemon, yum!)
1/2 C dried cranberries (got these from my mom who dried them at 105 degrees in her excalibur, thanks Mom!)
1 Tbsp. Honey
1 tsp. Cinnamon
2Tbsp. Cacao powder
1 tsp. cacao nibs
Put dates in the food processor until they're finely chopped. Then add the cashews and other dry ingredients. Process until it makes a nice nutty consistency and add the honey and lemon juice to seal the deal!
Alternatively you can soak the cashews for 4 hours, then follow the same process and dehydrate them on each side for 2 hours. This will make them more digestible by removing the enzyme-inhibitors.
